Do you know what- I have not got the first idea. Although we do have a kit at work to show that show that if you give a people a certain chemical to taste some people find it sour and others do not and that is down to a single letter difference in the DNA code. DNA is made up of chemical letters which we abbreviate to G, A, T and C. There are about 3.2 billion of these in each of your cells and in this case just a difference in 1 of the 3.2 billion letters decides if you have a certain taste. So I guess this could explain it.
However, It could just be people have grown up top not like bananas. That is the joy and frustration of human biology, we are very, very complicated!
